Blue Cheese Vinaigrette

*This may also be made with a soft cheese like mascarpone or crème fraiche if the taste of blue cheese is undesired.
  • 1 cup blue cheese, crumbled (gorgonzola works best)
  • Juice of 1 lemon
  • 1 cup Extra Virgin Olive Oil
  • 1 cup sour cream
  • Salt and Pepper, to taste
  1. Whisk cheese in lemon until well blended. Continue whisking while slowly adding remaining ingredients. Keep refrigerated for up to 2 weeks.
