Caramelized Pear and Coconut Rice Pudding {Dairy Free, Gluten Free, Vegetarian, Vegan}

November 19, 2014 by Roz 4 Comments

I am the vine; you are the branches. Those who remain in me, and I in them, will produce much fruit. For apart from me you can do nothing. John 15:5

I’m so happy to guest posting today at Traditional Cooking School by GNOWFGLINS with a heart warming recipe that is actually vegan, gluten and dairy free and totally traditional!

At this time of year the local farmer’s markets are filled with the most luscious colors and unique produce, just adding to the excitement of the season. At our family’s last farm stand outing we came across the most amazing red pears with the most perfect autumn color.

The pears were perfectly ripe and we snacked on them the whole way home, but I was wracking my brain to come up with a perfect recipe to use the pears in because they were so delicate and would surely be bad if they weren’t eaten within the next day.

I finally decided to caramelize the pears and make a rice pudding, but I wanted to use coconut milk and “work it” with a technique similar to risotto.

A rich, creamy and delicious caramelized pear rice pudding that is #vegan #vegetarian #glutenfree and #traditionalfood #realfood only! A collaboration of Real Food Family + Traditional Cooking School by GNOWFGLINS!
