Total Time: 60-80 minutes

Ingredients:

1 whole chicken, cut into pieces (reserve giblets and backbone for homemade stock)

frying fat, such as olive oil, coconut oil, beef tallow or organic lard

salt and pepper

dried herbs, such as Herbs de Provence or tarragon

 

Preheat oven to  375°F.

Heat fat or oil over medium heat and sear chicken for 3-5 minutes per side, until a crispy golden crust forms. Transfer seared chicken to a baking dish and season liberally with salt, pepper and dried herbs. Pour remaining fat or oil in pan evenly over chicken, the place in oven. Roast for 45-60 minutes, until golden brown and fully cooked (juices should run clear when sliced). Enjoy!
